This tomato/cucumber/onion salad is perfect to serve alongside gyros.

Ingredients  

  • 3 medium tomatoes (diced)
  • 2 medium cucumbers (peeled & diced)
  • ¼ medium red onion (diced)
  • 2 Tbsp fresh Italian parsley
  • 1 Tbsp olive oil
  • 1 dash salt
  • 1 dash pepper

Instructions: 

  • Wash, peel, and diced the vegetables.
  • Combine all the ingredients in a bowl and stir to combine.

Notes:

Make Ahead: This is best made up an hour or so ahead of time to enhance the flavors.
