Simple Chocolate Pudding
This is a simple, rich, yummy chocolate pudding.

Makes: About 2 cups

Ingredients
- ⅔ cup white sugar
- ¼ cup unsweetened baking cocoa
- 3 Tbsp cornstarch
- ¼ tsp salt
- 2 ¼ cups milk
- 2 Tbsp butter
- 1 tsp vanilla
Instructions:
If making on the stovetop:
- In a heavy-bottomed saucepan, stir together the sugar, cocoa powder, cornstarch, and salt.
- Gradually whisk in the milk and heat over medium heat.
- Stirring constantly, bring to a boil.
- Boil for 1 minute, then remove from the heat and stir in the butter and vanilla.
- Pour into the bowl you'll serve it in and cover with plastic wrap, pressing to cover the complete surface of the pudding (this prevents a scum from forming).
- Either serve warm or cool for at least 2 hours before serving.
If making in the microwave:
- In a microwave-safe bowl, whisk together the sugar, cocoa powder, cornstarch, and salt.
- Gradually whisk in the milk.
- Stirring every 2 minutes, microwave for 7-10 minutes or until the mixture comes to a boil.
- Stir in the butter and vanilla.
- Pour into the bowl you'll serve it in and cover with plastic wrap, pressing to cover the complete surface of the pudding (this prevents a scum from forming.)
- Either serve warm or cool for at least 2 hours before serving.
Notes:
Make Ahead: This is an easy recipe to make ahead and just serve cool.
Pie Possibility: You might be able to use this for pie filling if you thickened it a little more.
Diet: Gluten Free, Egg Free
From looking at other recipes, I recommend using 4 Tbsp of cornstarch if making a pie with this recipe. The following recipe looks pretty good for a pie.
