Simple Chocolate Pudding

- ⅔ cup white sugar
- ¼ cup unsweetened baking cocoa
- 3 Tbsp cornstarch
- ¼ tsp salt
- 2 ¼ cups milk
- 2 Tbsp butter
- 1 tsp vanilla
If making on the stovetop:
In a heavy-bottomed saucepan, stir together the sugar, cocoa powder, cornstarch, and salt.
Gradually whisk in the milk and heat over medium heat.
Stirring constantly, bring to a boil.
Boil for 1 minute, then remove from the heat and stir in the butter and vanilla.
Pour into the bowl you'll serve it in and cover with plastic wrap, pressing to cover the complete surface of the pudding (this prevents a scum from forming).
Either serve warm or cool for at least 2 hours before serving.
If making in the microwave:
In a microwave-safe bowl, whisk together the sugar, cocoa powder, cornstarch, and salt.
Gradually whisk in the milk.
Stirring every 2 minutes, microwave for 7-10 minutes or until the mixture comes to a boil.
Stir in the butter and vanilla.
Pour into the bowl you'll serve it in and cover with plastic wrap, pressing to cover the complete surface of the pudding (this prevents a scum from forming.)
Either serve warm or cool for at least 2 hours before serving.
Make Ahead: This is an easy recipe to make ahead and just serve cool.
Pie Possibility: You might be able to use this for pie filling if you thickened it a little more.
