Simple Chocolate Pudding

Ingredients  

  • cup white sugar
  • ¼ cup unsweetened baking cocoa
  • 3 Tbsp cornstarch
  • ¼ tsp salt
  • 2 ¼ cups milk
  • 2 Tbsp butter
  • 1 tsp vanilla

Instructions: 

If making on the stovetop:

  • In a heavy-bottomed saucepan, stir together the sugar, cocoa powder, cornstarch, and salt.
  • Gradually whisk in the milk and heat over medium heat.
  • Stirring constantly, bring to a boil.
  • Boil for 1 minute, then remove from the heat and stir in the butter and vanilla.
  • Pour into the bowl you'll serve it in and cover with plastic wrap, pressing to cover the complete surface of the pudding (this prevents a scum from forming).
  • Either serve warm or cool for at least 2 hours before serving.

If making in the microwave:

  • In a microwave-safe bowl, whisk together the sugar, cocoa powder, cornstarch, and salt.
  • Gradually whisk in the milk.
  • Stirring every 2 minutes, microwave for 7-10 minutes or until the mixture comes to a boil.
  • Stir in the butter and vanilla.
  • Pour into the bowl you'll serve it in and cover with plastic wrap, pressing to cover the complete surface of the pudding (this prevents a scum from forming.)
  • Either serve warm or cool for at least 2 hours before serving.

Notes:

Make Ahead: This is an easy recipe to make ahead and just serve cool.
Pie Possibility: You might be able to use this for pie filling if you thickened it a little more.
