Gluten Free Cornbread

You can hardly tell that this cornbread is gluten free.

Ingredients  

Dry Ingredients:

  • 1 cup gluten free flour
  • 1 cup corn flour (Masa Harina)
  • ¼ cup white sugar
  • 1 Tbsp baking powder
  • ½ tsp salt

Wet Ingredients:

  • 2 large eggs (add an extra egg if making gluten free)
  • 1 cup milk
  • ¼ cup vegetable oil

Instructions: 

  • Preheat the oven to 425°. Grease an 8×8 baking dish.
  • In a medium bowl, sift together the dry ingredients.
  • In another bowl, together the wet ingredients.
  • Gently combine the wet and dry ingredients and pour into the prepared pan.
  • Bake for 20-25 minuntes or until a toothpick comes out clean.
