Gluten Free Cornbread
You can hardly tell that this cornbread is gluten free.
Gluten Free Cornbread
Makes: An 8×8 pan – serves 6Double for a 9×13 pan – serves 8Triple for a 10×15 pan – serves 12

Ingredients
Dry Ingredients:
- 1 cup gluten free flour
- 1 cup corn flour (Masa Harina)
- ¼ cup white sugar
- 1 Tbsp baking powder
- ½ tsp salt
Wet Ingredients:
- 2 large eggs (add an extra egg if making gluten free)
- 1 cup milk
- ¼ cup vegetable oil
Instructions:
- Preheat the oven to 425°. Grease an 8×8 baking dish.
- In a medium bowl, sift together the dry ingredients.
- In another bowl, together the wet ingredients.
- Gently combine the wet and dry ingredients and pour into the prepared pan.
- Bake for 20-25 minuntes or until a toothpick comes out clean.
