Northern Cornbread

This is a great northern cornbread recipe- it has just a hint of sweetness. It’s great served alongside ham & beans or chili.

Ingredients  

  • 1 cup butter
  • 1 cup white sugar
  • 4 large eggs
  • 2 cups buttermilk
  • 1 tsp baking soda
  • 2 cups cornmeal
  • 2 cups all-purpose flour
  • 1 tsp salt

Instructions: 

  • Preheat the oven to 375°. Grease a 10×15 pan and set aside.
  • Melt the butter then stir the sugar into the hot, melted butter.
  • Quickly add the eggs and beat until well blended.
  • Measure out the buttermilk and add the baking soda to it. Then pour the buttermilk/baking soda mixture into the butter micture and combine.
  • In another bowl, combine the cornmeal, flour, and salt and mix until well blended.
  • Add to the wet ingredietns and stir until few lumps remain.
  • Pour the batter into the prepared pan and bake for 30-40 minutes or until a toohtpick inserted in the center comes out clean.
