Cucumber Onion Refrigerator Pickles

This is a great way to use up extra cucumbers!

Ingredients  

  • 2 cups cucumbers (sliced)
  • ½ cup white onion (sliced)
  • 1 cup water
  • cup vinegar (white, apple cider, and rice wine are all good)
  • 1 Tbsp white sugar (more or less to taste)
  • 1 ½ tsp salt (more or less to taste)

Instructions: 

  • Slice the cucumbers and onion and combine in a bowl.
  • In another bowl, combine the rest of the ingredients.
  • Pour the dressing over the vegetables and combine.
  • Store in an odor-proof container in the fridge until ready to serve.

Notes:

Make Ahead: This is a great recipe to make ahead because it’s best if it can marinate for at least a few hours and is even better if left overnight.
