Cucumber Onion Refrigerator Pickles
This is a great way to use up extra cucumbers!
Cucumber Onion Refrigerator Pickles
Makes: 2 cups

Ingredients
- 2 cups cucumbers (sliced)
- ½ cup white onion (sliced)
- 1 cup water
- ⅓ cup vinegar (white, apple cider, and rice wine are all good)
- 1 Tbsp white sugar (more or less to taste)
- 1 ½ tsp salt (more or less to taste)
Instructions:
- Slice the cucumbers and onion and combine in a bowl.
- In another bowl, combine the rest of the ingredients.
- Pour the dressing over the vegetables and combine.
- Store in an odor-proof container in the fridge until ready to serve.
Notes:
Make Ahead: This is a great recipe to make ahead because it’s best if it can marinate for at least a few hours and is even better if left overnight.
Diet: Gluten Free, Dairy Free, Egg Free
These were good, but they needed less water or more vinegar and sugar.
