Corn Fritters
These fluffy, fried corn fritters are a great addition to a fish fry or any other “deep fry” meal. I like this recipe because they aren’t tough at all.
Corn Fritters
Makes: About 24 fritters

Ingredients
- 1 qt vegetable oil (or other high heat oil for frying)
Dry Ingredients:
- ½ cup bread flour
- ½ cup self-rising flour
- 2 Tbsp white sugar
- ½ tsp baking powder
Wet Ingredients:
- 2 Tbsp milk
- 1 large egg
- 1 Tbsp butter (melted)
- ¼ cup cream-style corn (frozen)
Instructions:
- Heat vegetable oil in a deep cast-iron skillet or in a deep fryer.
- In a mixing bowl, combine the bread flour, self-rising flour, sugar, and baking powder.
- In another bowl, mix the milk, egg, butter, and corn together.
- Gently combine the wet and dry ingredients.
- When the oil in the pan is hot (350° is best), drop the fritters by spoonfuls into the oil and fry until golden brown.
- Line a platter with paper towels and place the cooked fritters on it. Keep warm in a warm oven unti ltime to serve.
