Corn Fritters

Ingredients  

  • 1 qt vegetable oil (or other high heat oil for frying)

Dry Ingredients:

  • ½ cup bread flour
  • ½ cup self-rising flour
  • 2 Tbsp white sugar
  • ½ tsp baking powder

Wet Ingredients:

  • 2 Tbsp milk
  • 1 large egg
  • 1 Tbsp butter (melted)
  • ¼ cup cream-style corn (frozen)

Instructions: 

  • Heat vegetable oil in a deep cast-iron skillet or in a deep fryer.
  • In a mixing bowl, combine the bread flour, self-rising flour, sugar, and baking powder.
  • In another bowl, mix the milk, egg, butter, and corn together.
  • Gently combine the wet and dry ingredients.
  • When the oil in the pan is hot (350° is best), drop the fritters by spoonfuls into the oil and fry until golden brown.
  • Line a platter with paper towels and place the cooked fritters on it. Keep warm in a warm oven unti ltime to serve.
