Caramelized Sweet Potato Cubes
These caramelized Sweet potatoes are a nice way to serve potatoes on the side.
Caramelized Sweet Potato Cubes

- 4 sweet potatoes (peeled and cubed)
- ½ cup olive oil (or enough to coat)
- 1 Tbsp salt (more or less to taste)
Instructions:
- Preheat the oven to 425°. Line a baking sheet with foil.
- Peel, wash, and cut the sweet potatoes into 1-inch cubes.
- Toss them in a bowl with olive oil and salt until coated.
- Spread the cubes in an even layer on the sheet and bake for 45-50 minutes, stirring occasionally.
Notes:
Prepare Ahead: You can wash and cut up the sweet potatoes then place them in a bowl, cover them with water, then store in the fridge until time to bake. Just pat mostly dry before adding the oil and salt.
Leftovers: These reheat just as well as the first time.
Diet: Gluten Free, Dairy Free, Egg Free
About 1/2 sweet potato per person is the right amount.
If you get these done early, they can keep a couple more hours in the oven at 300.
