Preheat the oven to 425°. Line a baking sheet with foil.
Peel, wash, and cut the sweet potatoes into 1-inch cubes.
Toss them in a bowl with olive oil and salt until coated.
Spread the cubes in an even layer on the sheet and bake for 45-50 minutes, stirring occasionally.
Notes:
Prepare Ahead: You can wash and cut up the sweet potatoes then place them in a bowl, cover them with water, then store in the fridge until time to bake. Just pat mostly dry before adding the oil and salt.Leftovers: These reheat just as well as the first time.
