Spanish Rice

- ⅛ cup vegetable oil (or other high heat oil)
- 2 cups rice (long grain)
- 4 cups chicken broth (or 1 chicken bouillon cube dissolved in 4 cups of boiling water)
- 1 8 oz can tomato sauce (you can substitute salsa if you want)
- 1 tsp salt
- 1 tsp minced garlic
- 1 dash cumin
- 1 dash garlic pepper
- ¼ cup cilantro (chopped - optional)
Heat the oil in a large frying pan (that has a lid) over medium heat.
When the oil is hot, add the rice and cook until golden brown.
When the rice is brown, add the other ingredients.
Stir and cover the pan. Let simmer for 30-40 minutes or until everything is cooked and there is no liquid left.
Fluff and serve.
