These scrambled egg muffins can easily be mixed up ahead of time, making them a simple breakfast dish.

shredded cheese

chopped veggies

Instructions:
Preprep: Cook the sausage and set aside to thoroughly cool. Chop the veggies and set aside.
Preheat oven to 350 degrees. Thoroughly grease a 12-muffin tin and set aside.
In a medium bowl, beat together the eggs, milk, salt, and pepper.
Add the cheese, cooked sausage, and chopped veggies and mix to combine.
Pour evenly into the 12 muffin tins and bake for 20-25 minutes, or until set.
Notes:
This is a great dish to prepare ahead of time and just pop into the oven when preparing breakfast.
