Scrambled Egg Muffins

These scrambled egg muffins can easily be mixed up ahead of time, making them a simple breakfast dish.

Ingredients  

  • 12 eggs
  • ½ cup milk
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ lb breakfast sausage (ground)
  • ½ cup shredded cheese
  • ½ cup chopped veggies (optional)

Instructions: 

  • Preprep: Cook the sausage and set aside to thoroughly cool. Chop the veggies and set aside.
  • Preheat oven to 350 degrees. Thoroughly grease a 12-muffin tin and set aside.
  • In a medium bowl, beat together the eggs, milk, salt, and pepper.
  • Add the cheese, cooked sausage, and chopped veggies and mix to combine.
  • Pour evenly into the 12 muffin tins and bake for 20-25 minutes, or until set.

Notes:

This is a great dish to prepare ahead of time and just pop into the oven when preparing breakfast.
