Pre-prep: wash the potatoes and cut them into wedges. Place in a bowl and cover with water until time to bake.
Preheat the oven to 425°. Line a baking sheet with foil and grease it.
Drain and dry the potatoes then toss with the remaining ingredients.
Spread evenly on the pan and bake, turning a few times, for 40-60 minutes or until the potatoes are golden and fork-tender.

Prepare Ahead: It's really helpful to wash and cut the potatoes ahead of time. Then cover with water and refrigerate until time to bake. When ready to use, just drain, pat dry, and continue with the rest of the recipe.
