Instructions:
Pour the milk in a heavy-bottomed saucepan. Sprinkle the gelatin over the milk and let sit for 5 minutes to soften the gelatin.
Stirring constantly, heat over medium heat just until the gelatin is dissolved, but the milk hasn't boiled - about 5 minutes.
Add the cream, sugar, and salt.
Continue to heat and stir until the sugar dissolves - about 2 minutes.*Rub a little of the mixture between your fingers and be 100% sure that there are no granules left, otherwise it will not set up.
Remove from the heat, stir in the vanilla, then allow to cool somewhat.
Pour evenly into 8 ramekins, small jars, or glass cups.
Cover and refrigerated until set - at lease 6 hours and up to 2 days.
Notes:
Make Ahead: This is perfect for making ahead, since it needs to set up for several hours.These are really good served with berries.We served them in 4-oz jars to a crowd and it seemed to be a good amount for each person.
