Ingredients

  • 9 large eggs
  • ¾ cup milk
  • 1 dash salt
  • 1 dash black pepper

Filling:

  • ¼ medium white onion (diced)
  • ¾ medium bell pepper (diced)
  • ¾ cup pre-cooked breakfast meat (sausage, bacon, ham...)
  • 1 ¼ cup shredded cheddar cheese

Instructions:

  • Pre-prep: Cook the breakfast meat and set aside to cool. Dice the onion and pepper and set aside.
  • Preheat the oven to 350° and grease a jelly roll pan (make sure to grease the sides too).
  • In a bowl, beat together the eggs, milk, salt, and pepper.
  • Pour the egg mixture into the prepared pan and bake for 12-15 minutes or until just set.
  • While the egg is baking, saute the chopped onion and pepper in a skillet. When they are soft, add the meat to reheat it.
  • When the eggs are done, remove them from the oven and sprinkle the vegetables and meat on one half (lengthwise) of the eggs.
  • Sprinkle the cheese on top of the vegetables and meat then fold the rest of the egg over it.
  • Return to the oven for a couple minutes to melt the cheese.

Notes:

This is a very versatile recipe. You can add or substitute as many types of vegetables or meats as you want.
Prep ahead: You can easily saute the vegetables and cook the meat the night before. Then in the morning, all you have to do is reheat them.
