Pre-prep: Cook the breakfast meat and set aside to cool. Dice the onion and pepper and set aside.
Preheat the oven to 350° and grease a jelly roll pan (make sure to grease the sides too).
In a bowl, beat together the eggs, milk, salt, and pepper.
Pour the egg mixture into the prepared pan and bake for 12-15 minutes or until just set.
While the egg is baking, saute the chopped onion and pepper in a skillet. When they are soft, add the meat to reheat it.
When the eggs are done, remove them from the oven and sprinkle the vegetables and meat on one half (lengthwise) of the eggs.
Sprinkle the cheese on top of the vegetables and meat then fold the rest of the egg over it.
Return to the oven for a couple minutes to melt the cheese.
