Lamb Chops

This is a delicious and simple way of cooking lamb chops.

Ingredients  

  • 8 lamb chops

Marinade:

  • ¼ cup olive oil (or enough to cover the meat)
  • 3 Tbsp lemon juice
  • 4 cloves garlic (minced)
  • 3 Tbsp rosemary (fresh or dried)
  • 2 Tbsp thyme (fresh or dried)

Before Cooking:

  • salt
  • ground black pepper

Instructions: 

Marinade:

  • In a small bowl, combine the marinade ingredients.
  • Place the meat in a gallon Ziploc bag, pour in the marinade, and mix until the meat is completely covered.
  • Allow to marinate in the refrigerator for at least 1 hour and up to 24 hours.

Cooking:

  • When time to cook, place a cooling rack on a cookie sheet.
  • Remove the meat from the bag, place on the cooling rack, and liberally sprinkle both sides of the meat with salt and pepper.
  • Broil for 20 minutes or until the meat comes to an internal temperature of 145°.
    These are also good grilled instead of broiled.

Notes:

Make Ahead: This is best if it can marinate for several hours, so you can easily prepare it ahead of time.
Marinade: The ratios in the marinade are very versatile.
