Carol's Fluffy Pancakes

Ingredients  

  • 6 large eggs (separated)
  • 4 Tbsp butter (melted and slightly cooled)
  • 3 ⅓ cups buttermilk
  • 3 cups all-purpose flour
  • 2 Tbsp white sugar
  • 2 tsp baking soda
  • 2 tsp baking powder
  • 1 tsp salt

Instructions: 

  • Preheat griddle.
  • Separate the egg whites and the egg yolks into two separate bowls.
  • In a large bowl, mix all the ingredients together except for the egg whites
  • In a separate bowl, beat the egg whites until they are stiff.
  • Fold the beaten egg whites into the batter and allow to stand for 5 minutes before cooking.
  • Cook on a hot griddle, turning once.
