Oven Omelettes
Stovetop omelettes are always the best, but this is a simple way to make omelettes for several people.

A 9-egg recipe serves 4-6 people (plan on 1 1/2 to 2 eggs per person).

Ingredients
- 9 large eggs
- ¾ cup milk
- 1 dash salt
- 1 dash black pepper
Filling:
- ¼ medium white onion (diced)
- ¾ medium bell pepper (diced)
- ¾ cup pre-cooked breakfast meat (sausage, bacon, ham…)
- 1 ¼ cup shredded cheddar cheese
Instructions:
- Pre-prep: Cook the breakfast meat and set aside to cool. Dice the onion and pepper and set aside.
- Preheat the oven to 350° and grease a jelly roll pan (make sure to grease the sides too).
- In a bowl, beat together the eggs, milk, salt, and pepper.
- Pour the egg mixture into the prepared pan and bake for 12-15 minutes or until just set.
- While the egg is baking, saute the chopped onion and pepper in a skillet. When they are soft, add the meat to reheat it.
- When the eggs are done, remove them from the oven and sprinkle the vegetables and meat on one half (lengthwise) of the eggs.
- Sprinkle the cheese on top of the vegetables and meat then fold the rest of the egg over it.
- Return to the oven for a couple minutes to melt the cheese.
Notes:
This is a very versatile recipe. You can add or substitute as many types of vegetables or meats as you want.
Prep ahead: You can easily saute the vegetables and cook the meat the night before. Then in the morning, all you have to do is reheat them.
