Spanish Rice
This Spanish rice is a nice addition to tacos, enchiladas, or any other Mexican meal.
Spanish Rice
Makes: 4 cups

Ingredients
- ⅛ cup vegetable oil (or other high heat oil)
- 2 cups rice (long grain)
- 4 cups chicken broth (or 1 chicken bouillon cube dissolved in 4 cups of boiling water)
- 1 8 oz can tomato sauce (you can substitute salsa if you want)
- 1 tsp salt
- 1 tsp minced garlic
- 1 dash cumin
- 1 dash garlic pepper
- ¼ cup cilantro (chopped – optional)
Instructions:
- Heat the oil in a large frying pan (that has a lid) over medium heat.
- When the oil is hot, add the rice and cook until golden brown.
- When the rice is brown, add the other ingredients.
- Stir and cover the pan. Let simmer for 30-40 minutes or until everything is cooked and there is no liquid left.
- Fluff and serve.
