This delicious enchilada sauce doesn't require you to have any tomato products on hand.

Ingredients  

  • ¼ cup olive oil
  • ¼ cup flour
  • ½ cup chili powder
  • 1 tsp garlic powder
  • 1 tsp cumin
  • ½ tsp oregano
  • 1 pinch salt
  • 4 cups chicken broth

Instructions: 

  • In a saucepan, heat the oil and flour for about 1 minute, whisking constantly.
  • Add the seasonings and cook for 1 more minute, whisking constantly.
  • Whisking constantly, slowly add the broth and stir until no lumps remain.
  • Continuing to stir frequently, simmer until the sauce has slightly thickened – 10-15 minutes.
