Thai Peanut Sauce

This delicious sauce works perfectly for Pad Thai or any peanut-related Thai dish.

Ingredients  

  • 1 cup peanut butter (unsweetened is best – chunky is fine)
  • ¼ cup soy sauce (*dietary note – verify gluten-free)
  • 2 Tbsp rice vinegar
  • ¼ cup brown sugar (cut back if the peanut butter is sweetened)
  • 1 tbsp chili garlic sauce
  • 2 Tbsp lime juice
  • 2 tsp minced garlic
  • 2 Tbsp grated ginger root (or 1/2 tsp powdered ginger)
  • cup warm water (more or less for preferred thickness)

Instructions: 

  • Combine all the ingredients except for the water and whisk thoroughly.
  • Add the water a couple Tbsp at a time until desired consistency is reached.

Notes:

Make Ahead: You can easily make this ahead of time and store it in the fridge.
For dressings, you will likely want it more runny than for a sauce.

    This is super good. I was a little surprised that the sauce didn’t go as far as I expected – maybe add more water next time? I think for Pad Thai, you could add a decent amount of water, pour the sauce over the noodles, then allow to simmer until thickened again. The extra water would help the sauce be distributed through the noodles evenly.
