Ingredients
- 1 cup peanut butter (unsweetened is best – chunky is fine)
- ¼ cup soy sauce (*dietary note – verify gluten-free)
- 2 Tbsp rice vinegar
- ¼ cup brown sugar (cut back if the peanut butter is sweetened)
- 1 tbsp chili garlic sauce
- 2 Tbsp lime juice
- 2 tsp minced garlic
- 2 Tbsp grated ginger root (or 1/2 tsp powdered ginger)
- ⅓ cup warm water (more or less for preferred thickness)
Instructions:
- Combine all the ingredients except for the water and whisk thoroughly.
- Add the water a couple Tbsp at a time until desired consistency is reached.
Notes:
Make Ahead: You can easily make this ahead of time and store it in the fridge.
For dressings, you will likely want it more runny than for a sauce.
Diet: Gluten Free, Dairy Free, Egg Free
This is super good. I was a little surprised that the sauce didn’t go as far as I expected – maybe add more water next time? I think for Pad Thai, you could add a decent amount of water, pour the sauce over the noodles, then allow to simmer until thickened again. The extra water would help the sauce be distributed through the noodles evenly.
