Creamy Southern Hot Corn

This is a delicious way to serve corn. You can either serve it spicy or substitute chilies for the jalapenos for a milder dish.

Ingredients  

  • 2 12 oz bags corn (frozen or canned)
  • 1 4 oz can diced jalapenos (or green chilies)
  • 1 8 oz pkg cream cheese (softened)
  • ¼ cup butter (softened)
  • ½ cup shredded cheddar cheese (optional)
  • salt and pepper to taste

Instructions: 

  • Combine all the ingredients in a 9×9 baking dish or in a small crockpot.
  • Oven: Bake at 350 for 20 minutes or until bubbling.
    Crockpot: Cook on low for 4 hours or on high for 2 hours – until bubbling.

Notes:

Make ahead: You can easily stir this together ahead of time then cook it in a crockpot for a few hours.
Diet: Gluten Free, Egg Free
