Italian Beef Sandwiches

This always goes over really well and it is a great meal to toss in the Crock-pot and forget about until mealtime.

Italian Beef Sandwiches

Makes: 10-12 sandwiches (Plan on 1/4-1/3 lb meat per person, so a 4 lb roast would serve 12.)

Ingredients  

  • 3-4 lb beef chuck roast
  • 2 cups water (or enough to cover the bottom of the Crock-pot so it won't dry out)
  • 2 pkg Italian Dressing Seasoning (or garlic salt, Italian seasoning, onion powder, and black pepper.

    My dressing mix is in the instructions below)

  • 12 oz pepperoncini peppers (jarred, sliced – add the juice too)

Instructions: 

  • Place the chuck roast, pepperoncinis, and water in the Crock-pot and cover the roast with the Italian dressing mix.
    Here is my dressing mix.
  • Cooking Times:
    Cook on high for 6-7 hours
    or cook on low for 9-11 hours
  • When the meat is cooked, shred it (it works well to do this with an electric hand mixer), and keep on warm until time to serve.

Notes:

Make Ahead: This is so easy, you hardly need to make it ahead, but you can cook the meat ahead of time and either refrigerate it or freeze it until the day you want to serve it. Then just warm it up in the crock-pot for a few hours or on the stove-top in minutes (you may need to add a little broth if it seems dry).
