Greek Salad
This tomato/cucumber/onion salad is perfect to serve alongside gyros.

- 3 medium tomatoes (diced)
- 2 medium cucumbers (peeled & diced)
- ¼ medium red onion (diced)
- 2 Tbsp fresh Italian parsley
- 1 Tbsp olive oil
- 1 dash salt
- 1 dash pepper
Instructions:
- Wash, peel, and diced the vegetables.
- Combine all the ingredients in a bowl and stir to combine.
Notes:
Make Ahead: This is best made up an hour or so ahead of time to enhance the flavors.
