Chewy, caramelly, oatmeal bears with chocolate chips and nuts!

Oatmeal Carmelitas

Ingredients  

  • ½ lb caramels* (32 caramels – or make caramel sauce and leave out the evaporated milk below. See note for recipe.)
  • 5 Tbsp evaporated milk or cream (omit if using homemade caramel sauce)
  • 1 cup all-purpose flour
  • 1 cup quick oats
  • ¾ cup brown sugar (packed)
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¾ cup butter (melted)

Toppings:

  • 1 cup semi-sweet chocolate chips
  • ½ cup nuts (chopped)

Instructions: 

  • Preheat the oven to 350°.
  • Either make homemade caramel sauce or combine 1/2 lb caramels with the 5 Tbsp of evaporated milk in a saucepan and melt.
  • Let the caramel sauce cool slightly.
  • In a bowl, combine the flour, oats, sugar, baking soda, salt, and butter.
  • Press half of the crust mixture into a 7×11 baking pan and bake for 10 minutes.
  • Remove from the oven, sprinkle with the chocolate chips and chopped nuts, then spread the caramel sauce over the top and sprinkle the remaining crumbs over everything.
  • Return to the oven and bake another 15-20 minutes.
  • Cool then chill for 1-2 hours.
