Oatmeal Carmelitas
Chewy, caramelly, oatmeal bears with chocolate chips and nuts!
Oatmeal Carmelitas
Makes: 12 bars in a 7×11 baking dish

Ingredients
- ½ lb caramels* (32 caramels – or make caramel sauce and leave out the evaporated milk below. See note for recipe.)
- 5 Tbsp evaporated milk or cream (omit if using homemade caramel sauce)
- 1 cup all-purpose flour
- 1 cup quick oats
- ¾ cup brown sugar (packed)
- ½ tsp baking soda
- ¼ tsp salt
- ¾ cup butter (melted)
Toppings:
- 1 cup semi-sweet chocolate chips
- ½ cup nuts (chopped)
Instructions:
- Preheat the oven to 350°.
- Either make homemade caramel sauce or combine 1/2 lb caramels with the 5 Tbsp of evaporated milk in a saucepan and melt.
- Let the caramel sauce cool slightly.
- In a bowl, combine the flour, oats, sugar, baking soda, salt, and butter.
- Press half of the crust mixture into a 7×11 baking pan and bake for 10 minutes.
- Remove from the oven, sprinkle with the chocolate chips and chopped nuts, then spread the caramel sauce over the top and sprinkle the remaining crumbs over everything.
- Return to the oven and bake another 15-20 minutes.
- Cool then chill for 1-2 hours.

Make Ahead: This is a great recipe to make ahead of time.
Diet: Egg Free
These are rich but very good. It works well to cut them into thin slices since they’re so rich. Since they are bars, they are a great dessert for workdays or to serve at teas.
