Peanut Butter Rice Krispies Log
This is a great variation on Rice Krispies Treats and is a very good addition to breaks or teas.
(Here’s another recipe – I haven’t tried it yet, but I’ve been told it’s even better than this recipe.)
Peanut Butter Rice Krispies Log
Makes: 1 15-inch long log

Ingredients
- 1 10oz bag marshmallows
- ¼ cup butter
- ¼ cup peanut butter
- 5 ½ cups Rice Krispies (*special diet note – verify gluten free)
- 1 ⅓ cups semi-sweet chocolate chips
- ¾ cup peanut butter chips
Instructions:
- Grease a jelly-roll pan and set aside.
- Melt the marshmallows, butter, and peanut butter in a saucepan on the stove or in the microwave, stirring often.
- When completely melted, stir the Rice Krispies into the marshmallow mixture until well coated.
- Spread the mixture in an even layer on the greased pan and allow to cool.
- Melt the chocolate chips and peanut butter chips in a saucepan on the stove or in the microwave, stirring often.
- When melted, spread the chocolate mixture over the Rice Krispies, leaving a 1-inch border around the edges.
- Roll the Rice Krispies up, working on the long side (so you will have a 15-inch log).
- Place the roll, seam side down, on a serving platter and refrigerate until set – about 1 hour.
- Cut into narrow slices and serve.
