Spanish Rice

This Spanish rice is a nice addition to tacos, enchiladas, or any other Mexican meal.

Ingredients  

  • cup vegetable oil (or other high heat oil)
  • 2 cups rice (long grain)
  • 4 cups chicken broth (or 1 chicken bouillon cube dissolved in 4 cups of boiling water)
  • 1 8 oz can tomato sauce (you can substitute salsa if you want)
  • 1 tsp salt
  • 1 tsp minced garlic
  • 1 dash cumin
  • 1 dash garlic pepper
  • ¼ cup cilantro (chopped – optional)

Instructions: 

  • Heat the oil in a large frying pan (that has a lid) over medium heat.
  • When the oil is hot, add the rice and cook until golden brown.
  • When the rice is brown, add the other ingredients.
  • Stir and cover the pan. Let simmer for 30-40 minutes or until everything is cooked and there is no liquid left.
  • Fluff and serve.
