Scalloped Pineapple Casserole

This casserole is really good served with ham. It’s sweet enough, you could almost serve it as a dessert!

*I haven’t had or made this specific recipe, but it looks like the recipes I have had.*

Scalloped Pineapple Casserole

Makes: A 10×15 pan

Ingredients  

  • 1 ½ cups butter (softened)
  • 2 ½ cups white sugar
  • 6 large eggs
  • 2 20oz cans crushed pineapple (well drained)
  • 1 Tbsp lemon juice
  • 8 cups small bread cubes (firmly packed – white bread with crusts removed is best)

Instructions: 

  • Preheat the oven to 350°. Grease a 10×15 baking pan and set aside.
  • In a large bowl, cream the butter and sugar until light and fluffy.
  • Add the eggs, one at a time, beating well after each addition.
  • Stir in the pineapple and lemon juice.
  • Gently fold in the bread cubes.
  • Spoon into the pan and bake, uncovered, for 30-40 minutes, or until the top is lightly golden.
  • Serve warm.
