Lime Coleslaw
This is an unusual coleslaw, but it’s really yummy!
Lime Coleslaw
Makes: 3 cups

Ingredients
- 3 cups red cabbage (shredded)
- 2 Tbsp cilantro (chopped)
- ¼ cup sour cream
- ¼ cup Mayonnaise
- 1 tsp lime zest
- 2 Tbsp lime juice
- 1 tsp white sugar
- ⅛ tsp salt
- 1 dash pepper
Instructions:
- Pre-prep: Shred the cabbage in a food processor. Chop the cilantro.
- In a small bowl, combine the rest of the ingredients.
- In a large bowl, combine all the ingredients and mix until thoroughly coated.
- Cover and refrigerate until serving time. *This is best if it has a few hours to rest so the flavors can blend.*
Notes:
Make Ahead: This is a perfect make-ahead recipe because it’s best if it can sit for a few hours to let the flavors blend. However, don’t make it too far in advance or else it may become soggy.
