Lime Coleslaw

This is an unusual coleslaw, but it’s really yummy!

Ingredients  

  • 3 cups red cabbage (shredded)
  • 2 Tbsp cilantro (chopped)
  • ¼ cup sour cream
  • ¼ cup Mayonnaise
  • 1 tsp lime zest
  • 2 Tbsp lime juice
  • 1 tsp white sugar
  • tsp salt
  • 1 dash pepper

Instructions: 

  • Pre-prep: Shred the cabbage in a food processor. Chop the cilantro.
  • In a small bowl, combine the rest of the ingredients.
  • In a large bowl, combine all the ingredients and mix until thoroughly coated.
  • Cover and refrigerate until serving time. *This is best if it has a few hours to rest so the flavors can blend.*

Notes:

Make Ahead: This is a perfect make-ahead recipe because it’s best if it can sit for a few hours to let the flavors blend. However, don’t make it too far in advance or else it may become soggy.
