Bacon Wrapped Green Beans or Sweet Bacon Beans

This is a great variation on green beans – you can go fancy and wrap bunches of beans in bacon strips or you can simply chop up the bacon and combine the bacon and beans.

Ingredients

  • 6 slices bacon (cut in half – don't use thick cut)
  • 1 16 oz bag green beans (frozen or fresh – thin beans are best)
  • 1 tsp garlic salt
  • ½ tsp black pepper
  • 2 Tbsp brown sugar
  • ¼ cup butter (melted)

Instructions:

Pre-prep: You can make this 1st part of the recipe ahead of time.

  • Preheat the oven to 400° and par-bake the bacon (until it's cooked but still very floppy) – about 7 mintues.
  • While the bacon is cooking, blanch the green beans – boil for 2-3 minutes or until just starting to get tender. Then drain and submerge in ice water.

Part 2:

  • Preheat the oven to 400°. Grease a cookie sheet and set aside.
  • In a small bowl, mix together the garlic salt, pepper, brown sugar, and melted butter.
  • In a large bowl, combine the blanched green beans and dressing – toss to coat.

Simple Version:

  • If you don't want to go into the trouble of making bean bundles, you can just chop the bacon into 1" squared and dump the bacon, beans, and seasonings together on the cookie sheet and bake it for 15-20 minutes or until the bacon is crispy.

Fancy Bean Bundles:

  • Cut the bacon slices in half then wrap 8-10 green beans with a piece of bacon and secure with a toothpick.
  • Place on the prepared cookie sheet then back for 15-20 minutes or until the bacon is crispy.

Notes:

Prepare Ahead: It’s very helpful to make the first part of the recipe ahead of time.
These can be super simple (just chop the bacon) or fancy (wrap the beans).
