Cooked Freezer Salsa

This is a really good cooked salsa that freezes well.

Ingredients  

  • 8 cups tomatoes (diced, seeded, & peeled – about 10 large)
  • 2 medium green peppers (chopped)
  • 2 large onions (chopped)
  • 2 medium jalapeno peppers (seeded & finely chopped)
  • ¾ cup tomato paste
  • cup condensed tomato soup, undiluted (If you are making this for special diets, verify that the soup is gluten and dairy free)
  • ½ cup white vinegar
  • 1 Tbsp white sugar (May need a little more or less)
  • 2 Tbsp salt
  • 4 ½ tsp garlic powder
  • ½ tsp cayenne pepper
  • 1 ½ tsp cumin
  • 1 Tbsp lime juice

Instructions: 

  • In a large saucepan, combine all the ingredients.
  • Bring to a boil, then reduce heat and simmer, uncovered, for about 45 minutes, stirring often.
  • Cool, then freeze or serve.

Notes:

Make Ahead: This is a great recipe to freeze. The day before you want to use it, remove it from the freezer and allow to thaw before serving.
