Cooked Freezer Salsa
This is a really good cooked salsa that freezes well.
Cooked Freezer Salsa
Makes: About 5 cups

Ingredients
- 8 cups tomatoes (diced, seeded, & peeled – about 10 large)
- 2 medium green peppers (chopped)
- 2 large onions (chopped)
- 2 medium jalapeno peppers (seeded & finely chopped)
- ¾ cup tomato paste
- ⅔ cup condensed tomato soup, undiluted (If you are making this for special diets, verify that the soup is gluten and dairy free)
- ½ cup white vinegar
- 1 Tbsp white sugar (May need a little more or less)
- 2 Tbsp salt
- 4 ½ tsp garlic powder
- ½ tsp cayenne pepper
- 1 ½ tsp cumin
- 1 Tbsp lime juice
Instructions:
- In a large saucepan, combine all the ingredients.
- Bring to a boil, then reduce heat and simmer, uncovered, for about 45 minutes, stirring often.
- Cool, then freeze or serve.
Notes:
Make Ahead: This is a great recipe to freeze. The day before you want to use it, remove it from the freezer and allow to thaw before serving.
