This is a delicious Caesar salad dressing!

Ingredients  

  • 1 clove garlic (peeled (more or less to taste))
  • ¾ cup mayonnaise
  • 2 anchovy fillets
  • 2 Tbsp Parmesan cheese (grated)
  • 1 tsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1 Tbsp lemon juice
  • 2 tsp half & half
  • 1 dash salt
  • 1 dash black pepper

Instructions: 

  • In a blender, combine all the ingredients and blend until smooth.

    The last several times we have made this we have used half or a quarter of the anchovies. So for a double recipe we use only one anchovy. It ends up being to strong to use two anchovies for a recipe.

  • 40oz of lettuce wasn’t quite enough for 24 people. It was a baby leaf lettuce, so it got slightly soggy in the dressing. If you use more substantial lettuce like romaine that would hold up better, that might be close to the right amount, but it would probably be best to have a little more.
    4 recipes of dressing was a good amount for the amount of lettuce we had.
