Carol’s Fluffy Pancakes
This recipe’s secret is the beaten egg whites, causing the pancakes to be exceptionally fluffy!
Carol’s Fluffy Pancakes

- 6 large eggs (separated)
- 4 Tbsp butter (melted and slightly cooled)
- 3 ⅓ cups buttermilk
- 3 cups all-purpose flour
- 2 Tbsp white sugar
- 2 tsp baking soda
- 2 tsp baking powder
- 1 tsp salt
Instructions:
- Preheat griddle.
- Separate the egg whites and the egg yolks into two separate bowls.
- In a large bowl, mix all the ingredients together except for the egg whites
- In a separate bowl, beat the egg whites until they are stiff.
- Fold the beaten egg whites into the batter and allow to stand for 5 minutes before cooking.
- Cook on a hot griddle, turning once.
