These scrambled egg muffins can easily be mixed up ahead of time, making them a simple breakfast dish.

Ingredients
- 12 eggs
- ½ cup milk
- ½ tsp salt
- ¼ tsp black pepper
- ½ lb breakfast sausage (ground)
- ½ cup shredded cheese
- ½ cup chopped veggies (optional)
Instructions:
- Preprep: Cook the sausage and set aside to thoroughly cool. Chop the veggies and set aside.
- Preheat oven to 350 degrees. Thoroughly grease a 12-muffin tin and set aside.
- In a medium bowl, beat together the eggs, milk, salt, and pepper.
- Add the cheese, cooked sausage, and chopped veggies and mix to combine.
- Pour evenly into the 12 muffin tins and bake for 20-25 minutes, or until set.
Notes:
This is a great dish to prepare ahead of time and just pop into the oven when preparing breakfast.
