Gluten Free Chocolate Chip Cookies

Ingredients  

  • 6 Tbsp butter
  • ½ cup white sugar
  • ½ cup brown sugar
  • 3 Tbsp honey
  • 2 tsp vanilla
  • ¼ tsp salt
  • ½ tsp baking powder
  • ½ tsp baking soda

  • 1 Tbsp apple cider vinegar
  • 1 large egg
  • 2 Tbsp milk
  • 2 cups gluten free flour (King Arthur measure for measure (or oat flour?))
  • 2 cups chocolate chips

Instructions: 

  • Preheat oven to 350°.
  • In a large bowl, beat together the butter, sugars, honey, vanilla, salt, baking soda, and baking powder.
  • Beat in the vinegar, egg, and milk.
  • Then stir in the flour and chocolate chips.
  • Scoop onto cookie sheets and bake for 12-14 minutes, or until the bottoms are barely starting to brown. They may not look done, but they are.
  • Remove from oven and allow to cool on the pan for 10 minutes before transferring to a cooling rack.
