Made a 3x recipe of chicken enchiladas for 24 people – it made 34 tortillas and there were 10 leftover.
If you have a crowd with several older people or several children, 45 enchiladas for 50 people is actually about right. There end up being several people who only take a partial enchilada.
Used about 16 cups of chicken for a 3x recipe.
Used 3lb beef for 16 enchiladas.
