This is a soft, light yet crispy batter breading for fried fish.

Ingredients
- 12 medium fish fillets
Dry Ingredients:
- 1 cup all-purpose flour
- ¼ tsp baking powder
- 2 tsp salt
- ½ tsp onion powder
- ½ tsp garlic powder
- ¾ tsp smoked paprika
- 1 dash red pepper (optional)
Wet Ingredients:
- ½ cup milk
- ½ cup water
Instructions:
- In a bowl, mix together the dry ingredients.
- Just before using, add the milk and water and mix well.*For a thinner batter, add 1/4 cup more liquid.

Make Ahead: You can easily mix up the dry ingredients ahead of time for quicker prep time later on.

This is a breading rather than a crumb coating.
This was really good breading – it was light but puffed up around the fillets really nicely.
