Flour Tortillas
These homemade flour tortillas are a nice addition to tacos or enchiladas.

Ingredients
- 4 cups all-purpose flour
- 1 tsp salt
- 2 tsp baking powder
- 2 Tbsp lard (or oil or butter – see note)
- 1 ½ cups water
Instructions:
- In a medium bowl, whisk the flour, salt, and baking powder together.
- Mix in the larf with your fingers until the flour resembles cornmeal.
- Add the water and mix until the dough comes together then place on a lightly floured surface and knead for a few minutes until smooth and elastic.
- Divide the dough into 24 equal pieces and roll each piece into a ball.
- Preheat a large skillet over medium/high heat.
- Cut 2 pieces of parchment paper into 12×12" squares and grease one side of each paper.
- Place a ball of dough in between the papers and roll into a circle – it should be so thin it's almost translucent.
- Place the tortillas in the hot skillet and cook until bubbly and golden; flip and continue cooking until golden on the other side.
- Place the cooked tortilla in a tortilla warmer or in a warm oven covered with a lightly dampened cloth.
- Repeat with the remaining dough balls.
Notes:
Make Ahead: These are just as soft and delicious if you freeze them. Just pull them out of the freezer and allow them to come to room temperature (still sealed in the freezer bag), or warm them in the microwave or skillet.
Tender Tortillas: From my experience, it seems like tough tortillas come from the dough not being rolled thin enough (it should almost be translucent before cooking because it will shrink and puff while cooking) and having the skillet heat too low. It should only take 20-30 seconds per side to cook the tortilla.
Hard Tortillas: The tortilla was cooked too long.
Soft Tortillas: As soon as they are cooked, stack them up and cover them with a clean tea towel. This traps the steam and makes soft, pliable tortillas.
Lard, Oil, or Butter? You can use lard, vegetable oil, or butter interchangeably to make flour tortillas. Butter will make them a bit crispier, but will also give them a buttery flavor.
Diet: Dairy Free, Egg Free
These are very good – just make sure you get them thin enough and your pan is hot.
