Waldorf Apple Salad

This Waldorf salad is a yummy way to serve apples.

Waldorf Apple Salad

Ingredients  

  • 8 medium apples
  • 1 cup celery (sliced)
  • 1 cup grapes (sliced in half)
  • 1 cup peanuts (or other chopped nuts)
  • ½ cup mayonnaise (more or less – enough to coat apples)
  • 2 Tbsp lemon juice (more or less to taste)
  • 2 tsp white sugar
  • 1 dash salt

Instructions: 

  • Slice the apples, celery, and grapes into bite-sized pieces then combine them in a large mixing bowl.
  • Cover the sliced ingredients with water and add a couple Tbsp of lemon juice to keep the apples from turning brown. Set aside.
  • In a small bowl, combine the Mayonnaise, lemon juice, sugar, and salt. Adjust the amounts to taste. Cover and store in the fridge until serving time.
  • When close to serving time, drain well and add the nuts (chop them if they are large). Add the dressing and stir to combine.

Notes:

Make Ahead: It works really well to prepare this ahead of time – just don’t add the dressing to the sliced ingredients – otherwise it will get runny. Just cover the sliced ingredients with water & a couple Tbsp of lemon juice and store the dressing, covered, in the fridge. Just before serving time, drain the water and combine the dressing and other ingredients.
