Salsa Verde or Green Sauce

Salsa Verde is a great side dish for any Mexican meal.

Salsa Verde or Green Sauce

Ingredients  

  • 4 small tomatillos
  • 1 medium jalepeno
  • 1 tsp chicken bouillon
  • ½ to 1 tsp salt
  • 3 Tbsp water (you may need a bit more or less)
  • 2 Tbsp cilantro
  • 1 Tbsp white onion (make sure it's fresh)

Instructions: 

  • Remove the husks from the tomatillos and wash the tomatillos and jalapenos.
  • Place the tomatillos and jalapenos in a small saucepan and add enough water to cover the bottom of the pan.
  • Bring to a boil then let simmer for 5-10 minutes, or until everything is soft. (You may need to flip them over halfway through.)
  • Remove from heat and add the chicken bouillon and salt to taste
  • Pour everything into a blender and add the cilantro and onion.
  • Blend until pureed.
  • Serve warm or cooled.

Notes:

Make Ahead: It works very well to make this ahead of time. Just store in the fridge until ready to serve.
Too runny? Simmer until it has reduced to the desired consistency.
Too thick? Add water, 2 Tbsp at a time, until the desired consistency is reached.
Too hot or acidic? Add only one of the following to reduce heat: 1/2 tsp baking soda or 1-2 tsp white sugar.
Like it hot? You do not have to seed the jalapenos. You can seed them if you want to reduce the heat of the salsa.
